The Parisian Diet Salmon and Zucchini Salad

4 meat + 1 vegetable + 1 fat
Ingredients for 1 person/s :

  • 4 oz. (120 g) salmon fillets, cooked and flaked
  • 2 small zucchinis, julienned, with skin on
  • 2 teaspoons olive oil
  • Salt and pepper

Directions:
  • In a pot of boiling water, cook the zucchini for 5 minutes.
  • In a salad bowl, toss together flaked salmon and zucchini.
  • Drizzle with olive oil.
  • Season with salt and pepper then serve.
