BBQ Baked Tofu with Almonds and Green Beans

For Gourmet Vegetarian Phase

4 meat + 2 vegetables + 2 fat
Ingredients for 1 person/s :

  • 4 oz. firm tofu
  • 1 teaspoon BBQ sauce
  • 1 cup green beans
  • 1 teaspoon olive oil
  • 6 crushed almonds
  • Salt and pepper

Directions:
  • Preheat oven to 400ºF.
  • Place the tofu in a foil or parchment paper lined baking sheet.
  • Brush tofu with barbecue sauce.
  • Bake for 10-12 minutes depending on the thickness.
  • While tofu is baking, place green beans in a microwave safe container with water.
  • Cover but leave a small vent.
  • Microwave on high for 2-3 minutes.
  • When green beans are done microwaving, add olive oil, almonds, and salt and pepper to container.
  • Recover and shake to melt butter.
  • Serve baked tofu and the green beans on the side.
